Засоленный арбуз (pickled watermelon)

Ingredients
  

  • 1000 g watermelon rind about 3 inches thick
  • 10 g dry dill stems
  • 150 g celery stalks
  • 25 g salt
  • 50 g garlic 10 cloves

Method
 

  1. cut all of the watermelon rind into bite size pieces about a 1.5 inch
  2. cut up the celery into 1 by 3-inch sticks
  3. peel and dice all of the garlic
  4. place watermelon, celery and garlic into a container and add enough water to cover
  5. add salt
  6. keep on the warm countertop until fermentation begins. Taste-test daily until slight acidity develops and small bubbles begin to form, 2-5 days depending on ambient temperature
  7. Once fermentation begins separate watermelon/celery garlic mix into smaller containers and cover with brine. Then move to a refrigerator.
  8. The fermentation will continue slowly in the refrigerator, and the watermelon will continue to enhance flavor.
