cut all of the watermelon rind into bite size pieces about a 1.5 inch
cut up the celery into 1 by 3-inch sticks
peel and dice all of the garlic
place watermelon, celery and garlic into a container and add enough water to cover
add salt
keep on the warm countertop until fermentation begins. Taste-test daily until slight acidity develops and small bubbles begin to form, 2-5 days depending on ambient temperature
Once fermentation begins separate watermelon/celery garlic mix into smaller containers and cover with brine. Then move to a refrigerator.
The fermentation will continue slowly in the refrigerator, and the watermelon will continue to enhance flavor.
